The Systematic Approach to Tasting Wine
The SAT is the single most important tool you will learn for the WSET Level 3 exam, and for every wine you taste for the rest of your life. It is a structured, repeatable method for describing wine objectively, assessing its quality, and determining whether it’s ready to drink. Master it, and you walk into the practical exam with confidence. Skip it, and you’re guessing.

Why the SAT Matters
When you taste wine casually, you might say “I like it” or “it’s fruity.” That’s fine at dinner. But the WSET Level 3 exam requires something fundamentally different: it asks you to describe what you observe, explain why the wine tastes the way it does, and judge its quality based on evidence.
The Systematic Approach to Tasting (SAT) gives you a framework for doing exactly that. It forces you to move through the wine in a logical order, appearance first, then nose, then palate, then conclusions, so that each observation builds on the last. This prevents you from jumping to conclusions before you’ve collected all the evidence.
The SAT Grid: Overview
The SAT grid is a structured form divided into four major sections. You work through them in order, every single time. No skipping, no jumping ahead.
Appearance
Tilt the glass at a 45-degree angle against a white background. You’re looking at three things:
Clarity
Is the wine clear or hazy? Almost all wines you’ll encounter will be clear. If a wine is hazy, it could indicate a fault, or it could be an unfiltered wine (which is intentional). At Level 3, simply note whether it’s clear or not.
Intensity
How deep or pale is the colour? The SAT scale runs: pale → medium(−) → medium → medium(+) → deep. To judge this, look through the core of the wine at the deepest point in the glass. A Pinot Noir will typically be pale to medium; a young Syrah will often be deep. Colour intensity can tell you about grape variety, age, and winemaking, for example, a thicker-skinned grape or longer maceration produces deeper colour.
Colour
Use the correct term from the SAT grid for the wine type:
White wines: lemon-green → lemon → gold → amber → brown
Rosé wines: pink → pink-orange → orange
Red wines: purple → ruby → garnet → tawny → brown
Colour tells you about age: white wines get darker with age (lemon moves toward gold and amber), while red wines get lighter (purple moves toward garnet and tawny). A young white Burgundy will be lemon; an aged Sauternes might be gold or amber. A young Cabernet Sauvignon will be purple-ruby; a 20-year-old Rioja might be garnet-tawny.
Nose
Swirl the glass gently, then bring it to your nose. You’re assessing four things:
Condition
Is the wine clean or faulty? This is a pass/fail question you answer before anything else. If the wine smells of wet cardboard, mouldy newspaper, or damp basement, it may have cork taint (TCA). If it smells flat and stale like a bruised apple, it may be oxidised. If it smells of struck match, rotten eggs, or burnt rubber, it may be showing reduction. We’ll cover faults in detail below.
Most wines you taste will be clean. But on exam day, you might get a faulty wine deliberately, being able to identify it is worth marks.
Intensity
How powerful are the aromas? Use the scale: light → medium(−) → medium → medium(+) → pronounced. A Muscadet might be light to medium(−); a Gewürztraminer will often be pronounced. This is about how strongly the aromas hit your nose, not about whether they’re good or bad.
Aroma Characteristics
This is where you list what you actually smell. Be specific: don’t write “fruity” when you can write “ripe peach, apricot, lemon zest.” The SAT expects you to identify aromas and categorise them as primary, secondary, or tertiary (see the next section). Aim for at least 5–7 descriptors on the nose.
Development
Where is this wine in its life cycle? The three options are:
Youthful: Dominated by fresh, primary fruit aromas. No signs of age.
Developing: A mix of primary fruit and secondary/tertiary characteristics. The wine is evolving.
Fully developed / Tired: Primary fruit has faded significantly. Tertiary aromas dominate. If the wine still has balance and interest, it’s fully developed. If it’s losing its character, it’s tired.
Primary, Secondary, and Tertiary Aromas
This is one of the most important concepts in the SAT. Every aroma you detect in a wine comes from one of three sources, and knowing which is which helps you understand the wine’s story.
Primary Aromas, From the Grape
These are fruit, floral, and herbal aromas that come from the grape variety itself and the conditions in which it was grown. They are the most prominent in young wines.
White examples: lemon, lime, green apple, grapefruit, peach, apricot, melon, lychee, elderflower, blossom
Red examples: red cherry, strawberry, raspberry, blackcurrant, blackberry, plum, black cherry, violet, green bell pepper
Climate link: Cooler climates tend to produce citrus and green fruit aromas (lemon, green apple). Warmer climates produce riper stone fruit and tropical aromas (peach, mango). Very warm climates can produce dried or cooked fruit aromas (fig, prune).
Secondary Aromas, From Winemaking
These come from the winemaking process, fermentation, malolactic conversion, lees ageing, and oak ageing. They layer on top of the primary aromas.
From fermentation: yeast, bread dough, biscuit, cheese rind (common in Champagne and sparkling wines aged on lees)
From malolactic fermentation: butter, cream, butterscotch (common in oaked Chardonnay)
From oak ageing: vanilla, toast, cedar, coconut, clove, nutmeg, smoke, chocolate, coffee
From lees contact: bread crust, biscuit, brioche, almond (think Muscadet sur lie or traditional-method sparkling)
Tertiary Aromas, From Ageing
These develop over time as the wine ages in bottle. They replace or blend with primary aromas as the wine matures. Tertiary aromas signal that a wine is developing or fully developed.
White wine tertiary: honey, marmalade, toast, petrol/kerosene (especially Riesling), dried apricot, ginger, mushroom
Red wine tertiary: leather, earth, mushroom, forest floor, tobacco, dried fruit, game, meat, truffle, wet leaves
Oxidative ageing (deliberate): caramel, toffee, almond, walnut (found in Sherry, Tawny Port, Vin Jaune)
Exam Tip
When listing aromas in an exam tasting note, group them by category. Write your primary fruit aromas first, then secondary winemaking aromas, then tertiary ageing aromas. This shows the examiner you understand where each aroma comes from, and that’s worth marks even if your specific descriptors differ from the model answer.
Palate
Take a sip. Let the wine coat your entire mouth. Draw a small amount of air across it (this releases aromas retronasally). Then spit or swallow. You’re assessing eight elements:
Sweetness
The first thing you perceive. Is the wine dry, off-dry, medium-dry, medium-sweet, or sweet? You detect sweetness on the tip of your tongue. Most still table wines are dry. But don’t confuse ripe fruit flavour with actual sweetness, a wine can taste “fruity” while being bone dry. True sweetness means residual sugar is present.
Watch out: High alcohol can create a perception of sweetness (a slightly viscous, warm sensation) even when the wine is technically dry. High acidity can mask sweetness, making a wine with 10 g/L residual sugar taste drier than it is.
Acidity
Does your mouth water? Does the wine feel fresh, crisp, sharp, or tart? That’s acidity. The scale is: low → medium(−) → medium → medium(+) → high. You feel acidity on the sides and underneath your tongue, and it triggers salivation.
Acidity is crucial for wine balance and ageing. A wine with too little acidity will taste flat and flabby; one with too much may taste sour and aggressive. Cool-climate wines typically have higher acidity than warm-climate wines.
Tannin (Red Wines Only)
Tannin creates a drying, gripping sensation on your gums, tongue, and the inside of your cheeks. It comes from grape skins, seeds, and stems, as well as from oak barrels. The scale is: low → medium(−) → medium → medium(+) → high.
But tannin isn’t just about quantity, it’s also about quality. Describe the texture: is it fine-grained and silky (indicating quality), or coarse, rough, and drying (indicating less ripe or over-extracted tannin)? High tannin that’s also fine-grained is a hallmark of great wine. High tannin that’s coarse is a sign of a lesser wine or one that needs more time.
Alcohol
You feel alcohol as warmth or heat in the back of your throat and chest. The scale is: low → medium → high (some tasters use medium(−) and medium(+) as well). Wines under 11% ABV are typically low alcohol; 11–13.5% is medium; above 13.5% is high.
Common mistake: Don’t confuse alcohol warmth with acidity. Alcohol is felt in the throat and creates warmth. Acidity is felt on the sides of the tongue and creates salivation. They’re different sensations in different places.
Body
Body is the overall weight and texture of the wine in your mouth, think of the difference between skimmed milk (light body), whole milk (medium body), and single cream (full body). Body is influenced by alcohol, tannin, sugar, and extract. The scale is: light → medium(−) → medium → medium(+) → full.
Flavour Intensity
How powerful are the flavours? This mirrors the aroma intensity scale: light → medium(−) → medium → medium(+) → pronounced. A wine can have pronounced aroma intensity but only medium flavour intensity (or vice versa), they’re assessed independently.
Flavour Characteristics
List the flavours you taste on the palate. These should largely confirm what you found on the nose, but you may notice additional elements (especially structural ones like minerality or salinity) that weren’t obvious by smell alone. Use the same primary/secondary/tertiary framework.
Finish (Length)
How long do the flavours persist after you spit or swallow? The scale is: short → medium(−) → medium → medium(+) → long. A short finish disappears almost immediately. A long finish continues to evolve for 30 seconds or more. Finish length is one of the strongest indicators of quality, great wines almost always have a long finish.
Conclusions: Assessing Quality
After you’ve observed, smelled, and tasted, you make your quality judgment. This isn’t about personal preference, it’s about objective assessment using the BLIC framework.
The BLIC Framework
BLIC stands for Balance, Length, Intensity, and Complexity. These are the four pillars of wine quality.
Balance
Are the structural components (acidity, tannin, alcohol, sweetness) in harmony with each other and with the fruit? A balanced wine has no single element that sticks out or dominates. An unbalanced wine might have searing acidity that overwhelms the fruit, or high alcohol that creates a hot, harsh finish. Balance is the single most important quality indicator.
Length
As described in the palate section, how long do the flavours persist? Great wines leave a lasting impression. Mediocre wines vanish quickly. Length is closely tied to concentration and complexity.
Intensity
How concentrated and expressive are the aromas and flavours? A wine with pronounced, clearly defined character is more likely to be high quality than one with vague, dilute flavours. But intensity alone isn’t enough, it must come with balance.
Complexity
Does the wine show multiple layers of aromas and flavours? Does it change and evolve in the glass? A simple wine might offer one or two flavour notes. A complex wine reveals a whole spectrum, primary, secondary, and tertiary aromas interweaving, shifting as the wine opens up. Complexity makes you want to keep coming back to the glass.
The Quality Ladder
The SAT uses a six-level quality scale. Here’s what each level really means:
Exam Tip
When you write your quality assessment, justify it. Don’t just write “very good.” Write: “Very good: this wine shows excellent balance between ripe fruit concentration and firm but fine-grained tannins, with pronounced intensity, emerging complexity (blackcurrant, cedar, vanilla, graphite), and a long finish.” The justification is where the marks are.
Conclusions: Readiness for Drinking
The final element of the SAT asks you to assess the wine’s readiness. The options are:
What drives ageing potential? Four things: high acidity, firm tannin (in reds), high sugar (in sweet wines), and concentrated fruit. If a wine has these structural elements, time in bottle allows them to integrate, soften, and develop complexity. If a wine is light and simple, ageing won’t improve it, it will just fade.
Common Wine Faults
Identifying faults is a core SAT skill. If you detect a fault, you call the wine “faulty” in your conclusions and briefly describe the fault. Here are the major ones you need to know:
Cork Taint (TCA)
What causes it: A chemical compound called 2,4,6-trichloroanisole (TCA), which can form in natural cork. It contaminates the wine on contact.
What it smells like: Wet cardboard, mouldy newspaper, damp basement, musty cellar. At low levels, it simply mutes the fruit, the wine smells flat and lifeless rather than overtly unpleasant.
How common: Estimated to affect 1–3% of wines sealed with natural cork. This is the most common fault you’re likely to encounter.
Can it be fixed? No. Once a wine is corked, it’s corked. At a restaurant, you should send it back.
Oxidation
What causes it: Excessive exposure to oxygen, either during winemaking (accidental) or in bottle (through a faulty closure or extended ageing).
What it smells/tastes like: In white wines: bruised apple, flat, stale, brownish colour. In red wines: prune-like, dried-out, brownish rim. The wine loses its freshness and fruit character.
Important distinction: Deliberate oxidative ageing (as in Sherry, Tawny Port, or Vin Jaune) is a style choice, not a fault. The fault is unwanted oxidation in a wine that’s supposed to be fresh.
Reduction
What causes it: A lack of oxygen during winemaking, particularly fermentation. Sulfur compounds build up when there isn’t enough oxygen to dissipate them.
What it smells like: Struck match, rotten eggs, burnt rubber, cooked cabbage. At mild levels, it might just smell slightly “funky” or closed.
Can it be fixed? Sometimes. Mild reduction often blows off with swirling or decanting. If the smell persists after vigorous aeration, it’s a genuine fault. If it dissipates, some tasters consider it a winemaking choice (especially in natural wines).
Volatile Acidity (VA)
What causes it: Acetic acid bacteria converting alcohol to acetic acid (vinegar). Small amounts are normal and can even add lift. Excessive VA is a fault.
What it smells like: Vinegar, nail polish remover (ethyl acetate). At low levels, it gives a sharp, pickled edge to the aromas.
Brettanomyces (Brett)
What causes it: A wild yeast (Brettanomyces) that can grow in barrels and contaminate wine during ageing.
What it smells like: Barnyard, horse stable, Band-Aid, medicinal, sweaty saddle. At low levels, some people find it adds complexity (controversial). At high levels, it dominates the wine and is universally considered a fault.
How to Write Exam-Quality Tasting Notes
The practical exam doesn’t ask you to identify the wine. It asks you to describe it accurately and assess its quality. Here’s what a strong tasting note looks like:
Structure Your Note Like the Grid
Follow the SAT order exactly: Appearance → Nose → Palate → Conclusions. The exam booklet will guide you, but practise writing notes in this order so it becomes second nature.
Be Specific and Consistent
- Use SAT vocabulary, not casual language. Write “medium(+) acidity” not “fairly acidic.”
- Commit to one term on each scale. Don’t write “medium to high”, pick one.
- Be descriptive about aromas and flavours. “Red cherry, raspberry, vanilla, clove, dried herbs” is much stronger than “red fruits and spice.”
- Make sure your palate section confirms your nose. If you said “pronounced intensity” on the nose, your palate flavour intensity should be consistent.
Connect Your Conclusions to Your Evidence
Your quality judgment and readiness assessment should flow logically from everything above. If you noted high acidity, firm tannin, pronounced intensity, and a long finish, your conclusion should reflect that, likely “very good” or “outstanding,” with potential for ageing. If nothing lines up, the examiner will notice.
Example Note (Abbreviated)
Appearance: Clear, deep ruby.
Nose: Clean, pronounced intensity. Blackcurrant, black cherry, cedar, vanilla, toast, hint of graphite. Developing.
Palate: Dry. High acidity. High tannin (fine-grained). Medium(+) alcohol. Full body. Pronounced flavour intensity. Blackcurrant, dark plum, cedar, tobacco, vanilla. Long finish.
Conclusions: Very good quality, excellent balance between concentrated fruit and firm but refined tannins, pronounced complexity, long finish. Can drink now, but has potential for ageing.
Practice Tips for Tasting Success
- Taste regularly and systematically. Every time you open a bottle, run the full SAT. It should take no more than 15 minutes. The more you practise, the faster and more precise you become.
- Taste blind when possible. If you know what the wine is before you taste it, you’ll unconsciously bias your notes toward what you expect. Have someone else pour, or cover the bottle.
- Build your vocabulary. Keep a list of descriptors you find yourself using, and expand it. If you always write “citrus,” push yourself to specify: lemon, lime, grapefruit, or orange peel?
- Compare wines side by side. Tasting two wines together sharpens your ability to detect differences. Try a high-acid wine next to a low-acid wine. Try a tannic wine next to a soft one.
- Use your aroma kit. Smell each aroma vial, then try to find that same aroma in a real wine. This trains your nose to recognise and name what it’s detecting.
- Write full notes, don’t just tick boxes. The exam requires written descriptors, not just scale selections. Practise writing out full notes by hand.
- Time yourself. 15 minutes per wine. Use a timer. If you’re running long, it’s usually because you’re overthinking the nose. Move on after 2 minutes of sniffing.
Aroma Kit Integration
Foundation Session (20 min)
Pull these from your kit: lemon zest, green apple, blackcurrant, vanilla, toast, mushroom. First, smell each one with your eyes closed and name it. Then smell them in random pairs and try to identify both. Finally, open a wine and see how many of these aromas you can find in the glass.
Wine drill: Taste one high-acid white (such as a Chablis or Muscadet) and one structured red (such as a young Bordeaux or Cabernet Sauvignon) under a strict timed SAT run, 15 minutes per wine. Write a complete note for each.
Fault training: If you can get your hands on a wine fault kit (or a wine with a known fault), smell it carefully and commit the aroma to memory. Knowing what cork taint smells like in real life is far more useful than reading about it.
Write-up target: Minimum 6 aroma descriptors on the nose, plus full structural assessment (acidity, tannin, alcohol, body) and a quality justification sentence on the palate.

Short Answer Strategy
If the written exam asks about the SAT (less common than the practical, but possible), anchor your answer in the logic of the framework: observation → description → assessment → judgment. Explain that the SAT moves from objective observation to subjective quality judgment, and that each step builds on the previous one. That structure is exactly what examiners look for.
Common Exam Traps
- Using subjective language too early. Words like “beautiful,” “lovely,” or “elegant” have no place in the observation sections. Save evaluative language for your conclusions.
- Calling a fault from a single weak signal. One odd note on the nose doesn’t make a wine faulty. Re-smell, re-taste, and confirm before committing.
- Confusing alcohol heat with acidity. Alcohol creates warmth in the throat; acidity creates mouth-watering freshness on the tongue. They’re different sensations.
- Defaulting to “medium” for everything. A note full of “mediums” suggests you weren’t paying attention. Force yourself to use the (−) and (+) modifiers.
- Rushing the nose. Give the wine at least 60 seconds of sniffing time. First impressions can be misleading. Many wines open up after a minute in the glass.
- Forgetting to assess finish length. This is one of the easiest marks to earn and one of the most commonly forgotten. After you swallow or spit, count how long the flavour persists.
