Sherry
Sherry is arguably the most misunderstood wine in the world. It is not one thing, it is a family of wines ranging from bone-dry to intensely sweet, from pale and delicate to dark and powerful. Understanding Sherry means understanding two uniquely complex processes: the solera system and biological ageing under flor. Both are heavily tested on the WSET Level 3 exam.

The Sherry Triangle
Sherry (called Jerez or Xerès in Spanish and French) can only be produced in a defined area of south-western Spain, centred on three towns known as the Sherry Triangle:
- Jerez de la Frontera: the historic centre, home to most major Sherry bodegas
- Sanlúcar de Barrameda: a coastal town at the mouth of the Guadalquivir river. Its unique humid, maritime microclimate produces a specific style called Manzanilla.
- El Puerto de Santa María: on the coast between Jerez and Sanlúcar

Grapes and Soil
Palomino
Palomino is the grape used for the vast majority of Sherry production. It is deliberately neutral: on its own, it produces a fairly bland, low-acid white wine. But this neutrality is exactly what makes it ideal for Sherry: the grape is a blank canvas on which the ageing process paints all the character. Palomino accounts for about 95% of plantings in the region.
Pedro Ximénez (PX)
Used to make intensely sweet Sherry. The grapes are dried in the sun (soleo) to concentrate their sugars before pressing and fermentation. PX Sherry is one of the sweetest wines in the world, like liquid raisins.
Muscat of Alexandria
A small amount used for sweet wines. Less important than PX for the exam.
Albariza: The Magic Soil
Albariza is Sherry's most important soil type, a brilliant white chalky soil made primarily of limestone, clay, and silica. It looks almost like snow when dry. Albariza has two critical properties:
- Water retention: in this extremely hot, dry region (minimal summer rainfall), albariza absorbs winter rain and holds it like a sponge, releasing moisture back to the vine roots during the scorching summer. A hard crust forms on the surface, sealing in moisture and reflecting sunlight back up to the canopy.
- Quality signal: the best Sherry vineyards are on albariza. The two other soil types (barro/clay and arena/sand) produce lower-quality wines.
Exam Angle
Albariza is a favourite exam topic. Be ready to explain: what it is (white chalky limestone soil), why it matters (retains water in hot dry climate, reflects sunlight), and where the best vineyards are (on albariza hills around Jerez).
How Sherry Is Made
Step 1: Base Wine
Palomino grapes are harvested, pressed, and fermented to dryness, producing a neutral, light, dry white wine around 11–12% ABV.
Step 2: Classification
The cellar master tastes each barrel of new wine and classifies it based on its delicacy and potential:
- Lighter, more delicate wines → selected for biological ageing (Fino and Manzanilla)
- Fuller, less delicate wines → selected for oxidative ageing (Oloroso)
Step 3: Fortification
The classified wines are fortified with grape spirit:
- Wines destined for biological ageing are fortified to 15–15.5% ABV. This level allows flor to survive.
- Wines destined for oxidative ageing are fortified to 17%+ ABV. This level kills the flor, ensuring the wine ages oxidatively.
Step 4: Ageing (in the Solera System)
All Sherry ages in the solera system (explained below). The type of ageing, biological or oxidative, determines the final style.
Biological Ageing: The Flor
Flor is a film of living yeast cells that forms naturally on the surface of the wine in partially filled barrels. It is one of the most extraordinary phenomena in winemaking, and it only occurs reliably in the Sherry region (and a few other places like Jura in France).
What Flor Is
Flor is a layer of Saccharomyces yeast that, after fermentation is complete, rises to the surface of the wine and forms a thick, creamy, wrinkled film. It looks like a floating white pancake. The barrels are deliberately filled only about 5/6 full, leaving a gap of air above the wine for the flor to sit on.
What Flor Does
- Protects from oxygen: the flor layer acts as a physical barrier between the wine and the air, preventing oxidation. This is why Fino stays pale and fresh.
- Feeds on the wine: the yeast cells consume glycerol and remaining traces of sugar, making the wine even drier, lighter, and more austere
- Produces acetaldehyde: a compound that gives Fino its distinctive sharp, pungent, green-olive, almond, bread-dough character
- Consumes alcohol: flor slightly reduces the wine's alcohol level over time
Conditions for Flor
- Alcohol must be 15–15.5%: above 15.5%, the yeast dies
- Humidity and moderate temperatures: the flor thrives in the humid conditions of bodegas near the coast, which is why Manzanilla (from coastal Sanlúcar) has the thickest, most consistent flor
- Nutrients: the flor needs fresh wine to feed on, which is why the solera system (constantly refreshing the oldest barrels with newer wine) is essential
The Solera System
The solera is a fractional blending system unique to Sherry (and a few other wines, like some Port and Marsala). It is the key to Sherry's consistency and complexity.
How It Works
Imagine a stack of barrel rows (called criaderas), arranged by age:
- Bottom row (solera): the oldest wine. This is where Sherry is drawn off for bottling.
- Middle rows (1st, 2nd, 3rd criadera, etc.): progressively younger wine
- Top row (youngest criadera): the newest wine enters here
The process:
- When Sherry is needed for bottling, a portion (never more than about one-third) is drawn from the solera (oldest barrels)
- The solera is then topped up with wine from the 1st criadera (next oldest)
- The 1st criadera is topped up from the 2nd criadera
- And so on, up to the youngest criadera, which receives new wine
The result: Because old wine is never completely emptied and new wine is constantly blended in, the solera produces a wine of consistent style with no distinct vintage. The average age of the wine increases over time, and old soleras can contain fractional components that are decades (even centuries) old.
Sherry Styles
Dry Styles (from Palomino)
Fino
Ageing: Entirely biological (under flor). Fortified to 15–15.5%.
Style: Pale lemon colour. Bone dry. Light body. Pungent aromas of green olive, almond, bread dough, yeast, and sometimes a saline/salty edge. Crisp acidity. Should be served chilled and consumed fresh after opening (like white wine, it oxidises once the bottle is open).
Food pairing: Tapas, almonds, olives, fried fish, jambón ibérico. One of the world's greatest food wines.
Manzanilla
Ageing: Biological (under flor), but exclusively in Sanlúcar de Barrameda.
Style: Even lighter and more delicate than Fino. Very pale. Distinctly saline, with chamomile, green apple, and bread-dough notes. The thicker flor in Sanlúcar's humid, coastal conditions produces the lightest, most delicate style of Sherry. Has its own separate DO (Manzanilla-Sanlúcar de Barrameda).
Amontillado
Ageing: First biological, then oxidative. The wine starts as a Fino under flor, but at some point the flor dies (either naturally as the wine ages and alcohol rises, or deliberately by fortifying to 17%+). The wine then continues to age oxidatively in the solera.
Style: Amber colour. Dry. Medium body. Combines characteristics of both ageing types: the pungent, nutty sharpness of biological ageing with the deeper, richer, caramel-toffee notes of oxidation. Aromas of hazelnuts, dried herbs, tobacco, and toffee. Complex and age-worthy.
Oloroso
Ageing: Entirely oxidative. Fortified to 17%+ from the start, so flor never develops.
Style: Deep amber to mahogany colour. Dry (naturally, though some commercial versions are sweetened). Full body. Rich, complex aromas of walnut, dried fruit, leather, toffee, and dark spice. Higher alcohol than Fino (typically 18–20%). Despite being dry, the concentrated, rich flavours can give an impression of sweetness.
Palo Cortado
Ageing: The rarest and most mysterious Sherry style. It begins with biological ageing like a Fino, but the flor unexpectedly dies early, and the wine finishes with oxidative ageing. Some claim this happens naturally; others suggest it is created deliberately.
Style: Sits between Amontillado and Oloroso, has the aromatic complexity of an Amontillado with the body and richness of an Oloroso. Dry, deep amber, intensely concentrated. Highly prized by connoisseurs.
Sweet Styles
Cream Sherry
An Oloroso sweetened with PX or rectified concentrated grape must. Medium to deep amber. Sweet, rich, and smooth. The most commercially popular sweet Sherry style. Harvey's Bristol Cream is the best-known brand.
Pedro Ximénez (PX)
Made from sun-dried Pedro Ximénez grapes. Extremely sweet: like liquid raisins, with flavours of dried fig, date, chocolate, coffee, and molasses. Very dark, almost black. Thick, syrupy texture. Often poured over vanilla ice cream as a dessert. Aged in its own solera system.

Short Answer Strategy
Sherry questions are very common. If asked to explain the difference between Fino and Oloroso, structure your answer around the ageing process: Fino = biological ageing under flor (15% ABV, flor protects from oxygen, produces acetaldehyde = pungent, pale, light, dry). Oloroso = oxidative ageing without flor (17%+ ABV, exposed to oxygen = dark, rich, nutty, full-bodied, dry).
