Oregon, Washington and New York
Beyond California, three states have carved out distinct identities in American wine. Oregon is Burgundy’s spiritual cousin in the New World. Washington is an unlikely powerhouse built on desert irrigation and long summer days. New York proves that cool-climate winemaking can thrive on the East Coast. Each state has a fundamentally different climate, philosophy, and grape focus.

Oregon
Oregon is the philosophical opposite of California in many ways. Where California celebrates abundance, scale, and variety, Oregon prizes restraint, terroir, and a near-obsessive focus on one grape: Pinot Noir. The state’s wine identity was built by pioneers in the 1960s and 70s who believed the cool, marginal climate of the Willamette Valley could produce Pinot Noir to rival Burgundy. They were right.
Climate
Oregon has a cool, maritime climate influenced by the Pacific Ocean. Key characteristics:
- Long, cool growing season with warm (not hot) summers and mild winters
- Significant rainfall: more than California, particularly in spring and autumn, which increases disease pressure
- Vintage variation is a real factor, much more so than in California. Cool, wet years can be challenging; warm, dry years produce exceptional results.
- Similar latitude to Burgundy (roughly 45°N), which is partly why Pinot Noir performs so well here
Labelling Laws
Oregon has the strictest labelling laws in the US, deliberately modelled on European standards:
- 90% minimum of the named grape variety must be in the wine (vs 75% federally). The only exception is Cabernet Sauvignon, which follows the federal 75% rule.
- This 90% rule was implemented specifically to protect the integrity of Oregon Pinot Noir, ensuring that when you buy Oregon Pinot, you’re getting almost entirely Pinot Noir.
- Generic terms like “Burgundy” or “Chablis” (once common on US wine labels) are banned in Oregon.
Exam Tip
Oregon’s 90% varietal minimum is a common exam detail. It shows how Oregon deliberately positions itself closer to European philosophy, emphasising authenticity and terroir over flexibility. This is the opposite of the federal AVA approach, which prioritises producer freedom.
Willamette Valley
Willamette Valley AVA
The Willamette Valley (pronounced “wil-LAM-it”) is the heart of Oregon wine. Located in the north of the state between the Coast Range to the west and the Cascade Mountains to the east, it is home to the vast majority of Oregon’s wineries and vineyards.
Climate: Cool, maritime. Long, dry autumns allow slow, even ripening. Morning fog is common. The growing season is cool enough that Cabernet Sauvignon generally cannot ripen here, which is exactly why Pinot Noir thrives.
Soils: A fascinating mix of volcanic (basalt) and marine sedimentary (ocean-floor deposits uplifted over millions of years). Many of the best sites are on the Jory soils: red, iron-rich volcanic clay that is well-drained and forces vine roots deep. The Dundee Hills sub-AVA is particularly associated with Jory soils.
Key grapes: Pinot Noir (the star, by far), Pinot Gris (Oregon’s most important white), Chardonnay (growing in prestige and quality).

Pinot Gris
Oregon’s most widely planted white grape. Made in a crisp, medium-bodied style (more like Italian Pinot Grigio than Alsatian Pinot Gris) with pear, apple, and citrus character. A good food-pairing wine and Oregon’s go-to white for everyday drinking.
Chardonnay
Once overshadowed by Pinot Gris, Oregon Chardonnay has rapidly gained prestige. The cool climate produces wines with bright acidity, green apple, citrus, and mineral character, closer in style to Chablis or Burgundy than to rich, oaky California Chardonnay. Many producers use barrel fermentation and lees ageing for texture and complexity.
Washington State
Washington is the second-largest wine-producing state in the US, and its wines are fundamentally different from both California and Oregon. The key to understanding Washington is understanding the Cascade Mountains and the rain shadow they create.
The Rain Shadow Effect
The Cascade Range runs north-south through Washington, dividing the state into two completely different climatic zones:
- Western Washington (Seattle side): Wet, cool, and maritime. Not suitable for most grape growing (though a small Puget Sound AVA exists).
- Eastern Washington: Lies in the rain shadow of the Cascades. The mountains block Pacific moisture, creating a semi-arid, near-desert climate with as little as 150–200mm of rainfall per year. This means vineyards must be irrigated: mostly from the Columbia River and its tributaries.
Climate Characteristics
Eastern Washington’s continental climate offers several advantages for wine quality:
- Long, sunny summer days: Washington is further north than any California wine region (~46–47°N), meaning up to 17 hours of sunlight during peak growing season. More sunlight = more photosynthesis = riper fruit.
- Cool nights: The desert climate creates dramatic diurnal temperature variation (the difference between day and night temperatures). Hot days ripen the grapes; cool nights preserve acidity. This combination of ripe fruit flavour with fresh acidity is the hallmark of Washington wine.
- Low disease pressure: The dry conditions mean fungal diseases (mildew, rot) are rarely a problem, reducing the need for chemical treatments.
- Winter freeze risk: The continental climate brings the risk of severe winter freezes that can damage or kill vines. This is the single biggest viticultural hazard in Washington.
Columbia Valley AVA
Columbia Valley
The Columbia Valley is Washington’s mega-AVA, encompassing the vast majority of the state’s vineyards. Within it, several important sub-AVAs have emerged:
- Yakima Valley: The oldest AVA in Washington (1983). Warm, dry, good for Cabernet Sauvignon, Merlot, and Riesling.
- Red Mountain: One of the warmest and driest sites. Produces powerful, tannic Cabernet Sauvignon and Syrah with deep colour and concentrated fruit.
- Horse Heaven Hills: Windy and warm, on the slopes above the Columbia River. Excellent Cabernet Sauvignon and Riesling.
Walla Walla Valley
A prestigious sub-AVA in the southeast corner of Washington (also extending slightly into Oregon). Known for premium Cabernet Sauvignon, Merlot, and Syrah. The town of Walla Walla has become a hub for small, boutique wineries producing high-quality, artisanal wines. Loess (wind-deposited silt) soils are distinctive here, producing wines with fine tannins and elegance.

For Washington, the key cause-and-effect chain is: rain shadow → dry continental climate → irrigation necessary → long sunny days + cool nights → ripe fruit with preserved acidity. This is what distinguishes Washington wines from both California (Mediterranean, less acidity) and Oregon (maritime, less ripeness).
New York State
New York is the third-largest wine-producing state, with a wine industry that has evolved dramatically over the past few decades. Historically dependent on native American grapes and hybrids, New York has increasingly embraced Vitis vinifera and now produces internationally recognised wines, particularly Riesling from the Finger Lakes.
Challenges of East Coast Viticulture
Growing Vitis vinifera on the East Coast presents challenges that West Coast producers rarely face:
- Harsh winters: Temperatures can drop far below freezing, risking vine damage or death. Some producers bury canes in soil for insulation.
- Humid summers: High humidity promotes fungal diseases (downy mildew, powdery mildew, botrytis in its destructive form), requiring careful canopy management and sometimes more spraying than in drier climates.
- Short growing season: The period between last spring frost and first autumn frost is shorter than on the West Coast, limiting which varieties can ripen fully.
- Pierce’s disease: A bacterial disease spread by insects that kills Vitis vinifera vines. It is a factor in some East Coast regions, though less so in the cooler north.
Finger Lakes
Finger Lakes AVA
The Finger Lakes, in upstate New York, is the most important wine region in the eastern United States. The region takes its name from a series of long, narrow, deep glacial lakes carved out during the last ice age.
How the lakes moderate climate: The lakes are deep enough (some over 180m/600ft) that they retain heat from summer well into autumn and release it slowly, preventing early frost. In spring, the still-cool water delays bud break, protecting vines from late spring frost. This lake effect is the key to quality viticulture in an otherwise challenging climate.
Key grape: Riesling is the star, producing wines that range from bone-dry to lusciously sweet, with lime, green apple, and floral character. With age, the classic petrol/kerosene note develops. Many critics consider Finger Lakes Riesling among the best in the New World.
Other grapes: Cabernet Franc (the most successful red, lighter, aromatic style), Pinot Noir, Chardonnay, Gewürztraminer. Hybrid varieties like Seyval Blanc and Vidal Blanc are also grown.
Long Island
Long Island AVA
Long Island, extending east of New York City into the Atlantic Ocean, has a maritime climate moderated by the surrounding water. It is significantly warmer than the Finger Lakes, with a longer growing season that allows Bordeaux grape varieties to ripen.
Key grapes: Merlot (the most successful), Cabernet Sauvignon, Cabernet Franc, Chardonnay, Sauvignon Blanc. The red wines are typically made in a Bordeaux-blend style.
Challenges: Hurricane risk in autumn (harvest season), high land prices (it’s the Hamptons), and humidity. But the maritime moderation also means less extreme winter cold than inland New York.
Sub-AVAs: North Fork (the primary wine-growing area, on the north prong of the island) and The Hamptons (South Fork).
