Canada
Canada is one of the world’s most northerly wine-producing nations, and while its still wines are growing in quality, it is Icewine that has made Canada famous on the global stage. Understanding Canada for the exam means understanding cool-climate viticulture at its limits, the VQA quality system, and exactly how Icewine is made and why it commands such high prices.

Why Canada Matters
Canada is a small wine-producing nation by global standards, but it punches well above its weight in two areas: cool-climate still wines (especially Riesling, Chardonnay, and Pinot Noir) and Icewine, where Canada is the world’s largest and most consistent producer. The country’s two main wine regions, Ontario and British Columbia, have markedly different climates and wine styles.
For the exam, Canada is important because it demonstrates how water bodies (the Great Lakes, Okanagan Lake) moderate otherwise extreme climates, and it provides the definitive case study for Icewine production.

The VQA System
The Vintners Quality Alliance (VQA) is Canada’s appellation and quality control system, currently operating in Ontario and British Columbia. It plays a similar role to European PDO systems, setting standards for origin, grape varieties, and winemaking practices.
What VQA Guarantees
- 100% Canadian-grown grapes from the designated appellation
- 100% Vitis vinifera or approved varieties
- Minimum quality standards assessed through tasting panels
- Specific rules for Icewine: the most strictly regulated category
Wines that do not meet VQA standards may still be sold, but they cannot carry VQA designation. Many non-VQA wines use imported bulk wine blended with Canadian wine, an important distinction for consumers and the exam.
Ontario
Ontario is Canada’s largest wine-producing province, accounting for roughly two-thirds of the country’s wine production. Its vineyards are concentrated along the shores of the Great Lakes, which provide the critical climate moderation needed for Vitis vinifera to survive Canadian winters.
Niagara Peninsula
Niagara Peninsula
The Niagara Peninsula is Ontario’s most important wine region, situated between Lake Ontario to the north and Lake Erie to the south, with the Niagara Escarpment (a long, elevated ridge) running through it.
Climate moderation: Lake Ontario is deep and retains summer warmth well into autumn, releasing it gradually and preventing early frost. In spring, the still-cool lake delays bud break, reducing frost risk. The Niagara Escarpment creates a gentle south-facing slope with good air drainage, further protecting against frost.
Climate type: Cool continental, moderated by the lakes. Warm enough to ripen Vitis vinifera, but barely, this is marginal viticulture, and vintage variation is significant.
Key grapes:
- Riesling: The most important white grape. Produces crisp, aromatic wines with green apple, lime, and floral character. Dry, off-dry, and sweet styles (including Icewine).
- Chardonnay: Both unoaked (crisp, mineral) and oaked (richer, Burgundy-inspired) styles.
- Pinot Noir: Increasing in quality. Light to medium-bodied, red fruit, earthy character. Best from warmer sub-appellations.
- Cabernet Franc: Performs well in cool Ontario conditions (it ripens earlier than Cabernet Sauvignon). Aromatic, red-fruited, sometimes with green pepper notes in cooler years.
Sub-Appellations
Niagara Peninsula has several sub-appellations reflecting different mesoclimates and soil types. The most notable include:
- Niagara-on-the-Lake: The warmest sub-appellation, closest to Lake Ontario’s moderating influence. Good for reds and Icewine.
- Beamsville Bench: On the escarpment, with good air drainage and exposure. Known for Chardonnay and Riesling.
- Twenty Mile Bench: Similar escarpment position. Riesling, Chardonnay, and Cabernet Franc.
Prince Edward County
A newer, emerging region on a peninsula jutting into Lake Ontario, east of Toronto. Cooler and more continental than Niagara, with limestone soils reminiscent of Burgundy. Pinot Noir and Chardonnay are the focus. Winters are harsh enough that some producers bury canes for protection.
British Columbia
British Columbia (BC), on Canada’s Pacific coast, is the country’s second-largest wine region. While most people associate BC with rain and temperate forests, the wine-growing areas are in the interior, where mountain-sheltered valleys create surprisingly warm, dry conditions.
Okanagan Valley
The Okanagan Valley is BC’s most important wine region and one of the most climatically diverse wine valleys in the world. It runs roughly 200 km (125 miles) north to south, with Okanagan Lake at its centre providing crucial climate moderation.
Climate gradient: The valley’s climate varies dramatically from north to south:
- Northern Okanagan: Cooler. Suited to Pinot Noir, Pinot Gris, Riesling, and Chardonnay. Fresher, more aromatic styles.
- Central Okanagan (around Kelowna): Moderate. Diverse range of varieties. Good Pinot Noir and white wines.
- Southern Okanagan (Oliver, Osoyoos): Surprisingly warm, bordering on semi-arid desert. Canada’s warmest viticultural area. Suited to Cabernet Sauvignon, Merlot, Syrah, and other warm-climate varieties. Summer temperatures can exceed 35°C (95°F).
Okanagan Lake’s role: The large, deep lake stores heat during summer and releases it gradually, extending the growing season and moderating winter cold. Vineyards close to the lake benefit most from this temperature regulation.
Irrigation: The southern Okanagan is dry enough to require irrigation, similar to Washington State. Water comes from the lake and local rivers.
Icewine: Canada’s Signature Wine
Icewine (Eiswein in German) is Canada’s most famous wine product and the single most important Canadian wine topic on the exam. Canada produces more Icewine than any other country in the world, primarily because its climate provides reliably cold winters, a crucial requirement.
How Icewine Is Made
The process is simple in concept but extraordinarily demanding in practice:
- Grapes are left on the vine long after the normal harvest, typically into December or January, allowing them to freeze naturally on the vine.
- Grapes must be harvested frozen at temperatures of −8°C (17.6°F) or below. Harvesting usually happens at night or in the early morning when temperatures are coldest.
- The frozen grapes are pressed immediately while still frozen. The water inside the grape is frozen solid, so what flows out is a tiny amount of intensely concentrated, sugar-rich juice. Most of the water stays behind as ice.
- Fermentation is slow due to the extreme sugar levels. The resulting wine has high residual sugar, high acidity, and typically moderate alcohol (9–13%).

Riesling Icewine
The most highly regarded Icewine variety. Riesling’s naturally high acidity balances the intense sweetness, creating wines of extraordinary complexity. Flavours include peach, apricot, tropical fruit, honey, and candied citrus, with a piercing acidity that keeps the wine vibrant and prevents it from feeling cloying.
Vidal Icewine
Vidal is a French-American hybrid grape with thick skin that makes it particularly resistant to cold and rot, practical advantages for a grape that hangs on the vine until deep winter. Vidal Icewine tends to be less complex than Riesling Icewine, with richer tropical fruit, honey, and caramel character and slightly less acidity. It is more widely produced and typically less expensive.
Cabernet Franc Icewine
A rare and striking style, a sweet rosé/light red wine with strawberry, cherry, and tropical fruit character. Made in small quantities, primarily in Niagara. The colour ranges from pink to light ruby.
Why Canadian Icewine Is So Expensive
Icewine prices typically start around $30–50 for a half-bottle (375ml) and can reach hundreds of dollars for premium Riesling versions. The high price reflects real costs:
- Extremely low yields: Roughly 10–20% of the juice that a normal harvest would produce. Most of the grape’s water content stays behind as ice. A vine that would normally produce one bottle of table wine may produce only one glass of Icewine.
- Crop loss risk: Grapes left hanging until December/January are exposed to rot, bird damage, bear damage, wind, and the risk that proper freezing temperatures never arrive. Entire crops can be lost.
- Labour intensity: Hand-harvesting in sub-zero temperatures, usually at 3–5 AM, is brutal and expensive work.
- Netting: Vineyards must be netted to protect against birds and wildlife eating the dehydrating grapes.
- Slow pressing: Because the grapes are frozen solid, pressing takes much longer and yields very little juice.
Exam Tip
Icewine questions are exam favourites. Know: natural freezing at −8°C or below, grapes pressed while frozen, high residual sugar with high acidity, Riesling (premium) and Vidal (workhorse), extremely low yields, and why it’s expensive. Also know that artificial freezing (cryoextraction) is not permitted for VQA Icewine, this distinguishes it from some cheaper “ice-style” wines made elsewhere.
Icewine vs Sauternes: Different Paths to Sweet Wine
Both are world-class sweet wines, but they achieve their sweetness through completely different mechanisms:
