Chile
Chile is one of the most geographically unique wine countries on earth, a narrow strip of land squeezed between the Andes Mountains to the east and the Pacific Ocean to the west, with the Atacama Desert to the north and Patagonian ice to the south. This natural isolation has shaped everything about Chilean wine, from its phylloxera-free vineyards to its signature grape, Carménère, to its extraordinary value proposition.

Why Chile Matters
Chile matters for the exam for several interconnected reasons:
- Phylloxera-free: Chile is one of the only major wine-producing countries that has never been affected by phylloxera (the vine louse that devastated European and most New World vineyards in the 19th century). Chilean vines are grown on their own roots, ungrafted, a rarity in the wine world.
- Carménère: Chile’s signature grape, once thought to be Merlot, was identified through DNA testing in 1994. No other country has made this grape their own to the same degree.
- Value: Chile is one of the world’s best sources of high-quality, affordable wine, particularly Cabernet Sauvignon and Sauvignon Blanc.
- Geographic diversity: The coast-to-Andes cross-section and the north-to-south latitude range create an enormous variety of climates within a small country.

Geography and Climate
Chile’s geography is defined by its extreme narrowness, averaging only 175 km (110 miles) from the Pacific coast to the Andes Mountains, and its extraordinary length, stretching over 4,300 km (2,670 miles) from north to south. This creates a wine map that works on two axes:
The North-South Axis (Latitude)
- Northern regions (e.g., Elquí, Limarí) are warmer and drier, producing aromatic whites and Syrah
- Central regions (Maipo, Rapel, Curicó) have a Mediterranean climate ideal for Cabernet Sauvignon, Merlot, and Carménère
- Southern regions (Maule, Bío-Bío, Itata) are cooler and wetter, suited to País, Carignan, and cool-climate whites
The East-West Axis (Coast to Andes)
Within any given latitude, the climate changes dramatically as you move from coast to mountains. Chile’s wine law recognises this with three lateral designations:
The Humboldt Current
The Humboldt Current (also called the Peru Current) is a cold ocean current that flows north along Chile’s entire Pacific coast from Antarctica. Its effects on viticulture are significant:
- Coastal cooling: Dramatically reduces temperatures along the coast, creating fog and cool conditions that allow cool-climate grapes to thrive at latitudes that would otherwise be too warm
- Low rainfall: The cold current suppresses cloud formation over the land, contributing to Chile’s dry climate and low disease pressure
- Morning fog: Regular coastal fog provides some moisture to the vines but burns off by midday, allowing warm, sunny afternoons
Phylloxera-Free: Why It Matters
Chile is one of the only major wine countries that has never been affected by phylloxera, the vine root louse that devastated European vineyards in the late 19th century and forced virtually every other wine-producing country to graft Vitis vinifera onto resistant American rootstocks.
Chile’s protection comes from its natural barriers:
- The Andes Mountains block land routes from the east
- The Atacama Desert (the world’s driest) blocks routes from the north
- The Pacific Ocean isolates from the west
- Sandy soils in many regions (phylloxera cannot survive in sand)
Practical result: Chilean vines grow on their own roots, ungrafted. Some argue this allows the vine to express terroir more directly, and it certainly allows for longer vine lifespans. Chile also has very old plantings of varieties that were wiped out elsewhere by phylloxera, including País (Mission) and old-vine Carménère.
Carménère: Chile’s Signature Grape
The story of Carménère is one of the most fascinating in wine:
The History
- Carménère was originally one of the six traditional Bordeaux grape varieties, widely planted before phylloxera.
- After phylloxera devastated Bordeaux in the 1860s–1880s, Carménère was not replanted because it was considered too difficult to grow (prone to poor fruit set, irregular yields). It effectively became extinct in France.
- Unknown to anyone, Carménère had been brought to Chile in the mid-19th century before phylloxera arrived. It survived there, ungrafted, but was misidentified as Merlot for over a century.
- In 1994, French ampelographer Jean-Michel Boursiquot identified that much of what Chile was calling “Merlot” was actually Carménère. DNA testing confirmed it.
- Chile has since embraced Carménère as its signature grape and is now the world’s largest producer by far.
Carménère
Viticulture: Late ripening, needs more heat and a longer season than Merlot. Prone to uneven ripening. Requires careful canopy management.
Flavour profile: At its best, Carménère produces medium to full-bodied wines with ripe red and black fruit (plum, blackberry, red pepper), a distinctive herbaceous/savoury character (green pepper, spice, sometimes smoky), soft to medium tannins, and moderate acidity. Well-made examples have a rich, velvety texture.
The green pepper question: When picked too early or from too-cool sites, Carménère can show strong green bell pepper character (from pyrazines, the same compounds found in unripe Cabernet Sauvignon). Top producers pick late and from warmer sites to minimise this, achieving a more subtle herbal note that adds complexity rather than dominating.
Key regions: Rapel Valley (especially Colchagua), Maule, Maipo, Cachapoal.

Carménère is an exam favourite. Know: originally from Bordeaux, thought extinct, brought to Chile before phylloxera, misidentified as Merlot, identified by DNA testing in 1994, late-ripening, distinctive herbaceous character, now Chile’s signature grape. Key Regions in Detail
Maipo Valley
Chile’s most famous red wine region, located immediately south of Santiago. Maipo is the benchmark for Chilean Cabernet Sauvignon, producing wines that have defined the country’s premium identity.
Climate: Warm Mediterranean with dry summers and cool nights. The Andes influence provides diurnal range.
Sub-zones: Alto Maipo (higher altitude, closer to the Andes, cooler, more structured wines) produces some of Chile’s most prestigious Cabernets. The valley floor is warmer and produces riper, more immediately fruity wines.
Style: Ripe blackcurrant, dark cherry, mint/eucalyptus, cedar. Medium to high tannin. Good ageing potential at the top level. Often compared (favourably) to mid-range Bordeaux at a fraction of the price.
Rapel Valley (Colchagua & Cachapoal)
South of Maipo, the Rapel Valley is divided into two main sub-regions: Colchagua (the more famous, further south) and Cachapoal (further north, closer to Santiago).
Colchagua: Known for rich, full-bodied reds, Cabernet Sauvignon, Carménère, Syrah, and red blends. The Apalta sub-zone has become famous for premium wines (Montes, Casa Lapostolle). Warm climate with some coastal influence in the western reaches.
Cachapoal: Similar grapes to Colchagua. The Alto Cachapoal (Andes foothills) is gaining recognition for concentrated Cabernet Sauvignon and Syrah.
Casablanca Valley
Chile’s first major cool-climate wine region, pioneered in the 1980s. Located between Santiago and the port city of Valparaíso, Casablanca sits close to the Pacific coast and is strongly influenced by the Humboldt Current and morning fog.
Climate: Cool. Regular morning fog burns off by midday, giving warm afternoons and cool nights. Frost can be a risk in spring.
Key grapes: Sauvignon Blanc (crisp, citrus, herbaceous, Chile’s best), Chardonnay (elegant, fresh), Pinot Noir (light to medium-bodied, red fruit). Syrah from warmer sites within the valley.
Significance: Casablanca proved that Chile could produce world-class cool-climate whites, challenging the country’s red-wine-only reputation.
San Antonio & Leyda
Even closer to the Pacific than Casablanca, and even cooler. The Leyda sub-region has become one of Chile’s most exciting areas for cool-climate wines.
Key grapes: Sauvignon Blanc (intense, mineral, citrus), Pinot Noir (elegant, earthy), Chardonnay, Syrah (cool-climate style, peppery, savoury).
Style: These are some of Chile’s most European-feeling wines, restrained, mineral, high-acidity, and focused. A dramatic contrast to the ripe, fruity reds of the central valleys.
Maule Valley
Chile’s largest wine region by planted area, further south than the premium central valleys. Maule has historically been associated with bulk production and the País grape (also called Mission, the same grape brought by Spanish missionaries in the 16th century).
The old-vine revival: In recent years, Maule has experienced a renaissance as producers rediscover the value of old-vine País and Carignan (Cariñena). These ancient, dry-farmed, bush-trained vines, some over 100 years old, produce wines of remarkable character: light to medium-bodied, earthy, mineral, with red fruit and spice. This movement parallels old-vine Zinfandel in California and Garnacha in Spain.
Significance for the exam: Maule illustrates how old, unglamorous grape varieties and regions can be revalued when producers focus on old vines, low yields, and terroir expression rather than international varieties and technical winemaking.
Wine Law and Classification
Chile’s wine law uses a Denominación de Origen (DO) system that defines geographic regions but, like the US AVA system, does not regulate grape varieties, yields, or winemaking practices. The law requires:
- 75% minimum of the named grape variety
- 75% minimum from the named region
- 75% minimum from the stated vintage
The 2011 update to Chilean wine law introduced the Costa (coastal), Entre Cordilleras (between the ranges), and Andes lateral designations, recognising the east-west climate variation that is at least as important as the traditional north-south regional divisions.
